Classic Roast Turkey Recipe

12 Servings

This is a classic recipe for a traditional festive occasion --
turkey with a giblet stuffing and gravy, which is quite simple to
make.

1 each whole turkey, 12-14 pounds
1 each onion, quartered
2 stalks celery, whole
bread stuffing crumbs, enough for a 12-14 pound turkey
1 dash salt and pepper
5 tablespoons flour

Remove giblets from turkey. Place in medium saucepan with onion
and celery. Add water to cover. Bring to a boil; reduce heat,
cover and simmer 45 minutes to 1 hour or until giblets are done.
Cool enough to handle; remove giblets and chop, reserving cooking
liquid for gravy. Prepare seasoned stuffing mix according to
package directions, adding chopped giblets.

Rinse turkey; pat dry. Rub salt and pepper into neck and body
cavities. Lightly spoon stuffing into neck cavity; close with
skewer. Fill body cavity. Secure drumsticks lightly with a
string. Roast uncovered on roasting rack in 325 degree oven 20 to
22 minutes per pound, or to internal temperature of 175 to 180
degrees. Because of variations in turkeys, begin checking for
doneness about one hour ahead. Any extra stuffing may be baked in
a covered casserole along with the turkey during the last hour of
roasting. Uncover stuffing during final 10 minutes of cooking.
Remove turkey to platter and let stand at least 20 minutes before
carving.

Meanwhile, make gravy by pouring off all but 6 tablespoons
drippings from roasting pan. Over low heat, stir in flour until
thickened. Let flour cook about 30 seconds, or until bubbly.
Measure reserved giblet cooking liquid; add water to make 2 1/2
cups. Add to roasting pan, stirring until smooth.
